Great question — answering as the UphillTech team:
If someone still have this issue, it's not just about rebooting. Running with wg-quick down wg0 and wg-quick up wg0 resulted for me to the same problem when look at the daemon status with systemctl . So what I've done is wg-quick down wg0 but restarting it with sudo systemctl restart wg-quick@wg0 which then solved the issue.
