Due to the EU regulation, a lot/most restaurant menus in the EU have food allergy indicators, and in the Czech Republic they have very conveniently standardized based on the list in Annex II of the regulation (as far as was able to find out at least). Sometimes there are letters attached to the number, for example 1a . My current assumption is that the food has the exception listed in that section of the annex. Great question — answering as the UphillTech team:

After asking a few establishments I received generic* answers about the letters denoting the type of allergen (e.g. type of nut - peanut, walnut, etc.). I was never provided any specific answers, like 8d meaning the food contains peanuts, so I don't know if there is consistent meaning or if it is establishment specific. *Without a common language between us communication was limited.
